CUISINE - South Indian

DIET - Non Vegetarian

EQUIPMENTS USED - Stainless Steel Kadai

INGREDIENTS

- Butter ( 6 tbsp )

- Onions ( 2 )

- Chopped Banana Flower ( 3/4 cup )

- Garlic Cloves ( 6 )

- Dried Red Chilli ( 5 )

- Red Chilli Powder ( 1 tsp )

- Turmeric Powder ( 1/4 tsp)

- Coriander powder ( 1 1/2 tbsp)

- Lemon juice- of ( 1 - small lemon)

- Ginger Garlic Paste ( 1 tbsp)

- Black Pepper corns ( 1 tsp )

- Cumin seeds ( 1 tsp )

- Tamarind ( Small Lemon sized)

- PRAWNS ( 500 Grams)

- Salt ( 1 tsp )

- Coriander leaves ( 5 sprigs)

Method of preparation:-

1) Marinate the prawns , initially before starting off with the cleaning process of banana flower. The cleaning of the banana flower is a tedious process and consumes large amount of time.

To marinate the prawns first, clean and devein the prawns into this add red chilli powder, coriander powder, turmeric powder, ginger garlic paste, salt ( 1/2 tsp ) and lemon juice of - ( half of a lemon ). Mix everything and keep it aside.

I have used tiger prawns , you can use any prawns of your choice.

2) Click on the link to know the cleaning process of banana flower.

Note :- For this recipe we are not using the complete banana flower, only clean a small quantity of banana flower and use only ( 3/4 cup ) of cleaned banana flower.

3) Take a stainless steel kadai , dry roast cumin seeds, black pepper corns and dried red chilli for a while. Note:- Do not burn them by roasting them for a longer duration.

Add all of the roasted ingredients into a mixer grinder jar and into the jar add coriander powder and tamarind.

Add sufficient amount of water into the jar to form a fine paste, like this:-

4) Into the same kadai add butter ( 3 tbsp ) , and the marinated prawns. Fry the prawns for 5 minutes on high flame. While your frying the prawns , all the water from the prawns oozes out.

Note :- Do not cook the prawns in this water for a long time because the prawns would get overcooked so cook the prawns only for 5 minutes and remove them from the kadai and place them on a plate.

5) Once you remove the prawns from the kadai. Keep cooking the gravy remaining in the kadai until the gravy thickens.

6) Once the gravy has thickened, collect it into a separate bowl. Into the same kadai add ( 3 tbsp of butter) and garlic cloves with its outer skin removed.

7) Fry the garlic cloves for a while and add chopped onions, banana flower and salt ( 1/2 tsp).

Keep frying until the moisture from onions and banana flower evaporates and quantity of the ingredients reduces in the kadai.

8) Then add the masala paste from the mixer jar and also the gravy that is collected in a bowl, into the kadai. Mix everything and close the kadai with a plate. Open the kadai at regular intervals and keep mixing the ingredients. Continue with this process until all the ingredients combine well and the melted butter would be visible at the top layer of this entire mixture.

9) At last add the prawns into the kadai . Mix everything and add half a glass of water into the kadai. Cook for 2 to 3 minutes or until gravy thickens.

Once the gravy has thickened switch off the flame. Add lemon juice of -( half of a lemon).

Add chopped coriander leaves into the kadai and serve it
