Vegan Jowar Flour Bottle Gourd Cake



The cake is made by using jowar flour, flax seed powder, and bottle gourd. This cake is topped with a layer of beetroot jam and coconut cream. On top of this, at the center of the cake, dried edible hibiscus flower is placed.


It's my invention with bottle gourd to make a cake with it. Do try it out and let me know in the comments.

Jowar or Sorghum Flour

Jowar Flour is easily digestible.

- It can pacify the Vata and Kapha dosha and has a cold potency (Sheeta Virya).

- It contains multitude of nutrients like iron, calcium, potassium and phosphorus.


- The abundant phytochemicals present in the jowar millet help in losing weight and promoting heart health.


- Jowar Millet is rich in protein, carbohydrate and dietry fiber which is essential for growth and development.


- It contains complex carbohydrates and since it is a slow releasing resistant starch which is absorbed very slowly in the gut does not cause a surge in blood sugar level.


- It contains potent antioxidants.These antioxidants scavange the free radicals that promote the formation of cancer cells. The oesophagal cancer and stomach cancer are avoided if jowar flour is made a staple food in your diet.


- The Ample amount of calcium and magnesium present in jowar helps in bone redevelopment and assist in healing of fractured and ageing bones. It is good to include jowar in elderly people diet to prevent the risk of osteoporosis and arthritis.


- Jowar is filled with iron and copper. Iron is needed for formation of red blood cells and copper for the blood circulation and together it prevents anaemia.


Beetroot contains all the health benefits of jowar flour and in addition it would :-

- Lower Blood pressure

- Boosts the Immune system.

Caution :-

Beetroots are high in oxalates. which can lead to kidney stones. Indulge beets in smaller myriad into your diet.


Health Benefits of Coconut Cream used:-

Coconut flesh is highly nutritious and rich in fibre, vitamins C, E, B1, B3, B5 and B6 and minerals including iron, selenium, sodium, calcium, magnesium and phosphorous. Unlike cow's milk , coconut milk is lactose free so can be used as an egg substitute for those with lactose intolerance. Coconut milk is popularly used in many cuisines especially in tropical and subtropical countries where they are grown.


Coconuts contain significant amounts of fat, but unlike other nuts, they provide fat that is mostly in the form of medium chain saturated fatty acids (MCFAs) in particular, one called lauric acid. Lauric acid is converted in the body into a highly beneficial compound called monolaurin, an antiviral, antifungal and antibacterial that destroys a wide variety of disease-causing organisms. It is therefore thought that consumption of coconut milk and other coconut-derived foods may help protect the body from infections and viruses.


Bottle Gourd is the healthiest vegetable because it is like a sedative, it has anti-inflammatory properties, and rich in nutrients.

- It helps in weight loss.

- Acts as a natural sedative.

- Facilitates Liver Health.

- Reduces the risk of several types of cancers and its good for diabetes.

Ingredients for Cake:-


- Jowar Flour ( 1 1/2 cup)

- Flax seeds powder ( 4 tbsp )

- Baking Powder ( 1/2 tbsp )

- Baking Soda ( 1/4 tsp )

- Oil ( 1/8 cup)

- Powdered Sugar or Castor Sugar ( 1/2 cup)

- Bottle Gourd ( Take one half of an entire bottle gourd)

- Ghee ( 1 tbsp )


Ingredients for Beetroot Jam:-


- Beetroots ( 2 1/2 ) ( Grated)

- Sugar ( 1/4 cup)

- Ghee ( 3 tbsp )

- Cardamom ( 3 )

Ingredients for Coconut Cream:-


- Coconut ( 1)


Method of Preparation for Making Coconut Cream:-


Step 1:- Just start with making coconut milk. Put all the coconut pieces into the mixer jar. Add sufficient amount of water into the mixer jar and grind it, grind it well.


Step 2:- Pour the entire coconut paste that has been formed in the mixer jar into a strainer and below the strainer keep a steel bowl and collect the coconut milk in it.


Step 3:- Leave the milk overnight and in the morning, a layer of coconut cream will be floating on top.

Collect this cream into a separate bowl and refrigerate it until the cake and jam gets prepared.





Note:-

It's best to prepare the coconut milk at night cause it takes many hours for the cream to be formed.


Step 4 :- Remove the cream from the refrigerator just before applying it on top of the cake. After you remove it from the refrigerator blend it with a hand blender until you get a foamy cream. This would take a lot of time and energy.




Method of Preparation for Making Beetroot Jam :-


Step 1:- Grate beetroots ( 2 and half beetroots ) with the help of a grater. I had taken large beetroots cause , once they are fired in ghee the quantity of it reduces.





Step 2:- Take a heavy bottomed Aluminium or steel kadai , whichever you prefer. Add ghee into it and let the ghee melt. Once ghee is hot and in melted state add the grated beetroot into it . Fry it until you stop getting the raw smell of beetroot and quantity of it reduces. Add cardamom seeds of ( 3 ) cardamoms and sugar into the kadai. Fry until the sugar melts and you get nice aroma.






Method of Preparation for Making Cake:-


Step 1:- Take a small bowl with just 75 ml of water. Add flax seeds powder in it. Let this flax seed powder soak in water. After it's soaked for a while, a thick paste is formed.


Note:-

Flax seeds are a very good egg substitute.

Step 2:- Pell the outer skin of bottle gourd. Cut the bottle gourd into smaller pieces.


Step 3:- Take a small steel kadai add ghee in it. Let this ghee melt and then add the bottle gourd pieces in it and fry it for a while. Fry it until the bottle gourd turns slightly brown and shrinks. Add this fried bottle gourd into a mixer jar and grind it.




Step 4:- Take a steel bowl add jowar flour, powdered sugar, oil , baking powder , baking soda, thick paste of flax seeds powder, and bottle gourd paste from mixer jar. Mix all of these.


Step 5:- Take a 3 -inch cake tart pan and line it with parchment paper. Pour the cake mixture in it.



Step 6:- Bake the cake in a preheated oven at 180ºC for 17 minutes or more depending on your oven capacity. Once the cake is prepared insert a toothpick into the cake , if the toothpick comes out neat without any sticky cake mixture , then your cake is done no need to bake it for a longer duration.


Step 7:- Let the cake cool down and unmold the cake. On top of the cake add the beetroot jam and on top of the jam, put the coconut cream. Sprinkle some coloured sprinklers around the cake and place dried edible flowers of your choice at the centre of the cake.
