SCS( Spinach Cauliflower Schezwan) Rice

Spinach Cauliflower Schezwan( SCS) Rice, for this rice recipe i have used homemade schezwan sauce , spinach, beans and carrot.This rice is mixed with cauliflower fry to enhance the taste of the rice.

INGREDIENTS
- Cauliflower ( 1 )
- Spinach ( 2 cups - chopped )
- Beans ( 1 1/4 cup - chopped)
- Carrot ( 1 )
- Onions ( 1 - if large) ( 2 - if small)
- Rice ( 1 1/4 cup)
- Salt ( 1 3/4 tsp)

- Black pepper corns( 3 tsp)
- Black and white sesame seeds ( 2 tsp)
- Soya Sauce ( 1 tsp )
- Corn Flour ( 1 tbsp )
- Maida / Refined wheat flour ( 2 tbsp )
- Ginger Garlic paste ( 1 tbsp)
- Sunflower oil ( 4 tbsp) - { for rice}
- Sunflower oil ( 1/2 cup) - { for cauliflower fry }
Method of Preparation for Cauliflower Fry
- Take the aluminium kadai and dry roast the black pepper corns and sesame seeds.
Roast them only for few minutes and place them in a mixer grinder jar. Pulse the mixer grinder until you get a fine powder.
- Wash all the spinach , beans, carrot and onions. Chop these vegetables very finely.
- Separate the cauliflower florets. While your separating the cauliflower florets make sure you take only the bigger florets because after you fry them the florets would shrink.
- Take a steel vessel and boil some water. Once the water starts boiling switch off the flame and add little bit of salt in it. Put all the cauliflower florets into the hot water. Place them in the water for 2 minutes.
- Remove the cauliflower florets from water after 2 minutes and place them in a steel bowl.
Into this bowl add the powder of black pepper corns and sesame seeds (1 tsp) , Schezwan Sauce, Sprinkle little bit of salt, Corn flour and Maida/ Refined Flour.
- Add water ( 1 tsp) in it and keep mixing everything , make sure all the florets are completely coated by the flours and powder that you have added into the steel vessel.
- Take a kadai add oil ( 1/2 cup) into it. When the oil is hot enough to fry the cauliflower florets , add the cauliflower florets little by little into the oil and fry them in batches.
- Once fried keep them aside on a plate.
Method of preparation for making Rice
- Add oil ( 4tbsp) into the aluminium kadai.
- Add onions in it. Fry them for a while , once the onions turn translucent , add chopped beans and carrot in it. Then add salt (1/2 tsp) in it. Fry these vegetables until the moisture from the vegetables are evaporated . Then add spinach. Fry all these vegetables until the quantity of these vegetables in the kadai reduces, this happens only if all the moisture from the vegetables has been evaporated.

- Add ginger garlic paste, powder of black pepper and sesame seeds ( 1 1/2 tsp), soya sauce ( 1 tsp) and schezwan sauce.
Fry all of the ingredients in the kadai for a while and switch off the flame.

Note:-
- Cook the rice in a steel vessel . Take a steel vessel add water ( 2 1/2 cups) . Let the water boil, once the water starts boiling add salt ( 1 1/4 tsp) into the boiling water , then add rice. When the rice is completely cooked switch off the flame.
- The salt is added only after water starts boiling because the salt reduces the boiling point of water i.e, if salt is added initially into the water then it would take a longer time for the water to boil.
