Cleaning Process of Banana Flower
- Take the banana flower remove the outer petal which is pink . This pink petal has to be discarded or you can either use it for the presentation purpose and serve the prepared Banana Flower Paneer Fry in it.

Note :- While removing the pink petals your fingers would turn brown to avoid this apply some oil to your fingers before you start removing the petals of the banana flower.

- You can see florets inside once you remove the outer pink petal. Collect all these florets.

- As your removing all the outer pink petals you will arrive at a stage where the petals start appearing white , the florets inside these white petals are very small there is no cleaning process needed for these smaller florets.

- The florets that has to be cleaned are kept separate from the florets that do not need any cleaning.

- The florets have to be cleaned or else it would give us a bitter taste after it is cooked and two things are discarded from these florets since they are not easily digestible and also to avoid the bitter taste you have to remove the filament with a yellow tip and second is the outer covering of these florets which is very small compared to the others. These are the two things that are discarded from each of these florets.

- Once all the florets are cleaned cut them into smaller pieces and put them into the buttermilk. Buttermilk is used to prevent discolouring of these florets .

- The Cleaning process is done.
Method for making Banana Flower Fry
- Before chopping the onions and capsicum , soak the red chillis in hot water. These red chillis have to be made into a fine paste later.
- Take a steel kadai in which paneer was fried add only oil ( 3 tbsp) in it. Once the oil is hot add jeera let the jeera splutter then add onions and capsicum. Fry until the onions turn translucent.
- Add the banana flower and salt into the kadai when the onions turn translucent and keep frying on low flame. The indication that all the ingredients are well fried is when the quantity of it are reduced in the kadai because all the moisture would have evaporated.

- At this stage add ginger garlic paste and red chilli paste. Red chilli paste is made by adding all the soaked red chillies into the mixer grinder jar and make a fine paste by adding just a little bit of water if needed.
- Fry for just few minutes and add tomato ketchup and fried paneer into it. Mix everything well and switch off the flame.
