Mutton Donne Biriyani

Makes - 3 servings

Course - Main Course

Diet - Non Vegetarian

Equipments used - Steel pressure cooker


Ingredients


- Mutton ( 1/2 kg)

- Rice ( 1 1/4 cup)

- Sunflower oil( 6tbsp)

- Onions( 3)

- Tomatoes ( 2)

- Green chilli( 11)

- Curd ( 1/2 cup)

- Salt ( 2 tsp)

- Turmeric ( 1/4 tsp)

- Pudhina/ Mint leaves( 1 cup)

- Ginger garlic paste( 1 1/2 tsp)

- Cinnamon stick ( small pinch)

- Cloves(3)

- Coconut Milk( 1 1/4 cup)


Method of Preparation:-


- Step 1- Cook the Mutton

Clean all the mutton pieces and add them in a steel cooker pan. Along with the mutton pieces, add onions , salt( 1 tsp), turmeric( 1/4 tsp), oil ( 2 tbsp). Pour ( 1 1/2 glasses of water into the cooker pan ).

Cook the mutton for upto 8 whistles.

Note - While adding the onions into the cooker pan you can either cut the onions or crush them in a mortar and pestle. If you crush the onions in a mortar and pestle you will definitely get a better taste.



- Step 2- Masala Paste

While the mutton is getting cooked prepare the masala paste. Take a mixer grinder jar add all these ingredients pudhina/ mint leaves, ginger garlic paste, green chilli (9), cinnamon stick, cloves.

Grind all of these into a fine paste , just add a little bit of water while grinding.

-Step 3- Coconut Milk

Prepare the coconut milk . Take grated coconut( 1 cup) , add it into the mixer grinder and also add water( 3/4 cup) into the same jar and grind it to a fine paste. Use a strainer to strain this paste and collect the coconut milk in a separate bowl.



- Step 4- After 8 whistles switch off the flame and once all the pressure has released from the pressure cooker , remove the mutton pieces from the cooker. Collect the water used for cooking the mutton pieces in a separate bowl because this water has to be later added into the cooker while cooking the rice.





- Step 5 - Take the same cooker pan used for cooking the mutton. Keep the pan on medium flame and make sure there is no water left out in the cooker pan. Once the pan is heated up and no sign of water in it add oil( 4 tbsp), onions, tomatoes, green chilli(2).







When all the ingredients are fried well add curd and the masala paste. Fry this just for few minutes and then add in the cooked mutton and salt ( 1 tsp). Cook all of this until all the water evaporates and the mutton has to absorb all the masala.

Note :- Keep cooking until all the water evaporates because at last you are just adding rice and pouring water to cook the rice so if there is any excess amount of water other than the water that you are going to add to cook the rice it will make the rice soggy. The rice grains would not be separate after cooking them. Please do remember this is a very crucial step.



This is how it looks when all the water evaporates and the mutton absorbs, all the masala.





- Step 6 - Add rice into the cooker pan. Pour the water used for cooking the mutton that is collected and kept separately and the coconut milk prepared.

Pour water( 1 1/4 cup) and coconut milk ( 1 1/4).

The quantity of water and coconut milk is taken according to the quantity of rice taken for ( 1 1/4 cups of rice), we have to add water and coconut milk as given above.
