KUSKA RICE AND BOTTLE GOURD CUTLET COMBO



KUSKA RICE is a plain biriyani rice without many vegetables only tomato and onion.

INGREDIENTS


- Curd ( 4 tbsp)

- Rice ( 1 1/4 cup)

- Turmeric powder ( 1/2 tsp)

- Coriander powder ( 2 tsp)

- Red chilli powder ( 3 1/2 tsp)

- Green chilli ( 4 )

- Salt( 2 tsp )

- Ginger garlic paste ( 1 tbsp)

- Coriander leaves ( 2 sprigs)

- Sauf / Fennel seeds ( 1 tsp )

- Cinnamon stick ( small inch)

- Cloves ( 3 )

- Black Cardamom ( 1 )

- Green Cardamom ( 1 )

- Marathi Moggu ( 1 )

- Onions ( 4)

- Tomato ( 3 )

- Sunflower oil ( 6 tbsp)


Method of Preparation


- Wash all the tomatoes, onions, green chillis, and coriander leaves. Slice the onions into long strips, tomatoes into small pieces, green chillis has to be slit in the middle, and coriander leaves has to be sliced finely.


- Take a steel cooker pan add sunflower oil, add fennel seeds, cinnamon stick, cloves, black cardamom, green cardamom, Marathi moggu. Fry all these spices for 1 minute.

- Add all the sliced onions into the cooker pan fry until onions turn brown. Then add green chillis and ginger garlic paste, fry for few minutes.


- Add the finely sliced tomatoes, for the tomatoes to turn soft and to quickly fry them add salt and turmeric powder. After adding salt the water from tomatoes comes out and the tomatoes would turn soft quickly.





- Add red chilli powder and coriander powder into the pan fry for few minutes and then add curd.

Fry until all the ingredients are combined well and oil starts oozing on the sides of the ingredients. The quantity of the ingredients in the cooker pan would reduce once all the ingredients are combined well .


- Pour 2 glasses of water into the cooker pan and add the washed rice into it. Finely add the finely sliced coriander leaves on top of water and close the pressure cooker pan.

NOTE:-

I have used Sona Masoori rice, if you are using the Basmati rice add in less amount of water into the cooker pan.


- Cook on pressure for only 1 whistle. The rice gets cooked real quick it would take only 5 minutes.


NOTE :- Once the pressure cooker pan is closed increase the flame . Cook the rice only on high flame to prevent the rice from getting burnt.


- Serve the rice with some bottle gourd cutlet. The link for making the cutlet is :-
